Banana coconut chia bowl

Start your Meatless Monday off right with this scrumptious breakfast bowl. The combination of banana, coconut and chia is smooth and subtly sweet. A yummy balance of healthy fats, protein and carbohydrates, awesome fuel for your day!

Serves 1

Ingredients:

½ cup coconut milk  (Native Forest brand is a great choice. BPA free cans)
¼ cup white chia seeds
1 large banana
½ tsp coconut oil
¼ tsp vanilla powder
1/8th tsp turmeric powder
Maple sugar, to taste
Cinnamon, to taste

Method:

  1. In a blender, blend the coconut milk with ½ of a banana and vanilla
  2. Put the chia seeds in a bowl with enough room to pour the coconut milk banana mixture on top. Let the chia seeds soak and absorb the liquid for 15-20min (at room temperature or in fridge)
  3. In a pan on medium heat melt the coconut oil and place slices from the other half of the banana in the pan. Sprinkle the maple sugar, cinnamon and turmeric on top of the banana as they brown. It is really to your liking as to how sweet or ‘cinnamon-ny’ you want it, so you choose how much!
  4. You will know they are done when there is a crispy golden brown coating on the banana slices (around 3-4 minutes).
  5. Place the caramelized bananas on top of chia pudding
  6. Eat and enjoy J
