A classic banana bread

  • 1¾ cups AP flour
  • 1¼ tsp baking powder
  • ½ tsp baking soda
  • ¾ tsp salt
  • ⅔ cup sugar
  • ⅓ cup shortening
  • 2 eggs
  • 2 TBSP milk
  • 1 cup mashed ripe banana (about 3 med size)


  1. Preheat oven to 350
  2. Sift together flour, baking powder, baking soda and salt
  3. Beat together sugar and shortening till light.
  4. Add eggs and milk beating until smooth
  5. Alternately fold in flour mixture and mashed bananas to creamed mixture beating until smooth.
  6. Turn batter into a lightly greased 8x4x2 loaf pan.
  7. Bake for 60 minutes or until a knife inserted into centre comes away clean.
  8. Cool in pan for 10 minutes then cool completely on a wire rack.
